  17. 1/2 cup onion, thinly sliced
  18. 4 cups basmati Rice
  19. 6 cups water
  20. 1/2 cup condensed milk
  21. 2 tablespoon milk
  22. pinch saffron
  23. 10-12 alubokhara
  24. to taste Salt, according

Instructions to make to make Kacchi Biryani.    Cuisine: Bangladeshi

  1. Steps to prepare the meat:

    Sprinkle some salt on the meat and let stand for 15-20 minutes.
  2. Wash the meat and drain all water.
  3. Take all the spice from red chilli to caraway seed, grind.
    Take the pot where biryani will be cooked
  4. Add the meat and yogurt, ground spice mix, garlic and ginger paste and salt.
  5. Marinate for anywhere between 30 minutes to overnight.

    Add about 3 tablespoon of butter/ghee on a frying pan on medium heat.

    Wash rice and drain all water.
  14. Boil 6 cups of water. Add salt.
  15. Add the rice.
  16. Turn off the stove at the first sight of water boiling again (bubble forming on the water) after adding the rice.
  17. Rice will be uncooked at this point
  18. Drain the rice completely saving the drained hot water in another clean pot.
  19. Steps to assemble the biryani layers and cook:

    Preheat oven to 350 degrees Fahrenheit.
  20. Soak the saffron to the milk.
  21. Add butter/ghee to 1 cup of hot water that was set aside in the rice preparing step.
  22. Add the prepared potatoes on top of the marinated meat.
  23. Sprinkle some fried onion.
    Add the
  24. Alubokhara(prunes), if using.
  25. Add half the water-butter mixture.
  26. Layer in the prepared rice.
    Sprinkle the saffron milk.
  27. Make 4-5 indentations from the rice layer through the potato till the meat.
  28. Add the condensed milk through the indentations.
  29. Sprinkle the remaining water-butter mixture.
  30. Sprinkle the remaining fried onion.
  31. Add the remaining hot water in a way that water doesn’t go above the rice layer
  32. You may not need to use all of the hot water.
  33. Cook in the oven for 1.5 hours.
  34. Serve with salad, kabab and chutney.
