- 1 small red bell pepper (small diced)
- 20-25 ivy gourd (tindora)(small diced)
- 1 cup mix frozen Veggie (green peas, cauliflower, carrot, beans)
- 10-15 cashews (Chopped)
- Salt as per taste
- 1/2 tsp Turmeric Powder
- 11/2 tsp red chilli powder
- 1/2 tsp kitchen king masala
- 1 lemon juice
- Handful coriander leaves chopped
- For Serving

- Salad
Steps to make to make Mix Veg Pulao
- Take a big deep vessel add water let it get boil. Add soaked rice. Add salt. Boil the rice till it get 70% cooked



- Rice is 70% cooked. Strain the rice. Get all whole masalas ready.



- Get all Veggies ready. Put big kadhai/ pan on Medium flame. Add oil and all whole masalas, when it crackled add onions. Saute it till light golden.



- Now add Potato mix and cover the pan let Potato get half cook. Now add ivy gourd. Cover it and let it cooked. When Potato and ivy gourd get cooked add both bell peppers. Mix it well and saute it for 1/2 second.



- Add all frozen Veggie (which boiled). Saute it for a min. Add tomatoes and cashews. Mix it well.



- Add ginger garlic paste, salt, and all dry Masala. Saute it well.



- Now add 70%cooked rice. Mix it well. Squeeze lemon. Mix it.



- Sprinkle coriander leaves. Mix it and ready to serve. Garnish with whole masala and cashews. Served with curd and salad.
