Ingredients and spices that need to be Prepare to make Veg dum Biryani in Pressure Cooker:

  1. 1 cup Basmati rice
  2. 2 tbsp ghee
  3. 4 tbsp oil
  4. 2 bay leaf
  5. 1 inch cinnamon stick
  6. 3 cloves
  7. 1 brown cardamom (bari elechi)
  8. 2 green cardamom (choti elechi)
  9. 1/2 tsp sahi jeera
  10. 3 onion
  11. 1 tbsp ginger-garlic paste
  12. 1 tsp chilli powder
  13. 5-7 beans, chopped
  14. 1 small cauliflower, cut into pieces
  15. 1 carrot, chopped
  16. 1/2 capsicum, chopped
  17. 10-12 paneer cubes
  18. 4 baby potatoes, peeled and poked
  19. 1/2 cup curd
  20. 1 tsp turmeric powder
  21. 1 tsp kasmiri mirch powder
  22. 1 tsp Cummin powder
  23. 2 tsp biryani masala
  24. Salt to taste
  25. 3 tbsp saffron influence milk
  26. 1 handful coriander leaves
  27. 1 handful mint leaves
  28. 2 green chilli slit

Instructions to make to make Veg dum Biryani in Pressure Cooker

  1. For barista,
    Cut onions into thin slices make sure they are almost same thickness.
    Heat oil in a pan, add onion slices and fry. Keep the flame on low-medium.
    Once they start changing its colour take out half onions that we use with vegetables.
    And fry the remaining onions until crisp and golden.
  2. Wash and soak rice for 30 minutes.
    Heat 3 cup water in a deep pot add in 1tbsp ghee, brown cardamom, green cardamom, cinnamon, bay leaf, soaked rice and 1/2tsp salt. Cook until the rice cooked upto 90%.
    Drain extra water and keep the rice ready.
  3. In a mixing bowl add all the vegetable pieces, paneer cubes, baby potatoes, ginger-garlic paste, chilli powder, 1tsp salt, turmeric, kasmiri mirch powder, biryani masala, Cummin powder and half fried onions. Mix everything together nicely.
  4. In a pressure cooker heat the remaining oil of onion. Splatter sahi jeera and add in marinated vegetables. Stir and cook on low flame until vegetables shrink and masala start releasing oil.
    Turn off flame.
  5. Layered cooked rice over the vegetables. Then, on top spread barista (fried onions), saffron milk, coriander leaves, mint leaves and chilli slit.
    (This stage You may also add 1tsp kewra water, if you like)
    Cover and cook for 12-15 minutes on very low flame.
  6. Let it cool at temperature until the pressure inside the cooker goes down naturally.
    Open the lid and fluff the rice carefully with a sharp spatula.
    Veg. Dum Biryani is ready.
  7. Serve hot with raita and onion salad. Enjoy 😊.
